If I have something sweet, cookies are my ultimate naughty treat. However, whilst I like to treat myself once in a while, I do like to make sure that what I put into my body is not only scrummy but nourishing and healthy too and these healthy banana cinnamon and oat cookies hit the spot every time. These cookies are the ultimate treat but yes, you can eat these without feeling guilty as all of the ingredients are healthy and full of nutrients and are unbelievably tasty. The texture of these cookies is a cross between a chewy cookie and a flapjack and are so delicious. If you haven’t tried pairing banana and cinnamon together before, they are match made in heaven. However, I know that some people don’t like banana and so you can switch this out for apple puree if you like; both options work really well.
- 150g Oats
- 2 Ripe Bananas
- 1 teaspoon of Cinnamon
- 2 tablespoons of Raw Honey
- 4 heaped tablespoons of cashew butter (or nut butter of your choice)
- 1 tablespoon of Coconut Oil
- 80% Dark Chocolate
Pre-heat the oven to 355F/180C/Gas 4.
In a saucepan over a low heat melt your coconut oil.
Peel the bananas. In a shallow bowl, mash the bananas with a fork.
Add the cinnamon, raw honey, cashew butter, oats and coconut oil to the mashed bananas.
Crush two squares of dark chocolate to form chocolate chips. Add this to the oat, banana mixture and stir through.
Line a baking tray with some greaseproof paper. Using a tablespoon, make heaped tablespoon size balls of the cookie dough and place onto the baking tray. Flatten the balls of dough with a fork.
Makes approximately 10 cookies.
Bake in the oven for about 15-20 minutes until the cookies are golden brown.
